BABY LED WEANING- BANANA PANCAKES

When Max was a bub there was one thing I was a total failure at. The one thing every good parent should be able to give their child HOMEMADE PANCAKES!!

I don’t know what the problem was, why did I struggle to make them. I would mix up the batter and they would just stick to the pan.

I tried EVERYTHING, low heat , high heat, mix the batter up better, use butter, use oil. I finally just GAVE UP and wrote a post about my pancake disasters –

I finally just GAVE UP and wrote a post about my pancake disasters – Breakfast fail

This year I have cracked it!! I treated myself to a new frying pan. A fancy non-stick marble type thing made by Tefal. It seems this is where I was going wrong, it wasn’t the baker who had the issue it was the tools used.

I know what you’re thinking ” a good workman never blames his tools” guess that saying is a load of shite because here I am blaming my tools.

Banana pancakes have become a breakfast staple in our house and they really are so simple to make.

I do have to just quickly give a shout out to Nicola from the blog Mummy to Dex, she has posted so many pancake recipes and gave me the push to give it another go. If you are in the thick of baby led weaning head over to her site for lots of yummy easy recipes.

PANCAKE RECIPE
Ingredients:

You won’t believe me when I tell you there are just 3 ingredients:

Frylight ( for the pan)

1 Banana

1 Egg

Method:

Step One:

Squirt a few sprays of fry light onto your frying pan, get it nice and hot

Step Two:

Mash up the banana in a bowl. Add the egg and give it a good whisk

Step Three:

Pour some of the liquid into the frying pan as you would an omelette. I use a spatula to stop the edges from sticking. Once it’s firm and a little brown underneath do you best to flip it over and cook to the same consistency

Step Four:

Let the pancake cool. Add anything you like to it and watch the kids devour it in record time.

So there you have it, easy peasy.

My next baking challenge is banana and peanut butter biscuits.
